2. Recipe and Method
Recipe (1–2 servings):
- 80g of red or green lentils

- 1 tablespoon of extra virgin olive oil
- 600 ml of water or vegetable broth

- Add olive oil to a pan and sauté diced onions and minced garlic over low heat until fragrant.
- Add diced carrots and tomatoes, and stir-fry until the tomatoes release some juice.
- Add the lentils, water or vegetable broth, and then add dried oregano or bay leaves.
- After bringing to a boil, reduce to a simmer, cover, and cook for 25–35 minutes, or until the lentils are tender.
- Depending on your preferred texture, you can use a spoon to crush some of the lentils to make the soup thicker.
- Season with a little sea salt and black pepper, turn off the heat and let it sit for a few minutes before eating.
